Omelette

1 Whole Egg
3 Egg Whites
1 oz Pepper Goat Cheese
4-6 Grape Tomatoes (optional)
Fresh Basil (optional)

I use clarified butter and put it in a frying pan.  Crack the eggs in and when the eggs are just about done cooking, I add the cheese and tomatoes.  Fold over eggs on top and let cook until desired consistency and top with some fresh basil.

Enjoy!

Chicken Bruschetta

Chicken Breast (pound down to about a 1/4 inch)
Tomatoes
Fresh Basil
Minced Garlic
Onion Powder
Chili Powder
Sea Salt
Pepper (I used fresh cracked)
Olive Oil
Green beans

Cook chicken in pan with some olive oil. Sprinkle Onion Powder, Chili Powder, Sea Salt, Pepper. Cook until done.  In the meantime, cut tomatoes into small pieces, chop up basil and mix both in a bowl with the minced garlic.  Just eyeball the amount of garlic (less if you don't like it or a little more if you do).  I put about a tablespoon of garlic in the bowl with one large tomato and about 6 leaves of basil and a little salt and pepper.

Steam green beans.

Serve on plate and ENJOY!!!

(This is a very simple recipe and the extra bruschetta you can put on toasted bread)

I am still here!

Sorry I have not updated my blog in a few months.  Life as been crazy around here and we have moved in with my in-laws while we work on getting a house built.  I have some wonderful recipes to share and I am compiling them so that I can sit down and type my little heart out for you to enjoy the recipes.

Come back soon (give me a few days) and hopefully you will find a recipe to try.  There are some great ones already posted if you have not tried them yet, go for it!

Hershey Kiss Cookies

1/2 cup butter
1/2 cup shortening
1 cup sugar
1 cup brown sugar
2 teaspoons vanilla
2 eggs
2 1/2 cups flour
3/4 cup cocoa
1/2 teaspoon salt
1 teaspoon baking soda
Hershey Kisses (any kind)

Heat oven to 375 degrees

Cream the first four ingredients together. Add the vanilla and eggs.  Mix in the flour, cocoa, salt and baking soda until combined.  Unwrap kisses and place in a bowl.  Grab about a tablespoon of dough and place a kiss in the middle and cover with the cookie dough.

Bake for 6-8 minutes (I did 7 minutes and let them sit on the pan for a minute after I pulled them out of the oven.)

Let cool on cooling sheet.

Baked Chicken Taquitos

1/2 cup cream cheese
1/2 cup green salsa
a squeeze of a fresh lime (I made it without and it was still really good)
1/2 tsp of cumin (I put about 1 tsp.  I like it a little spicy)
1 tsp chili powder
1/2 tsp onion powder (I used onion salt and only used less)
1/4 tsp of garlic powder
3 TBS cilantro (I used a little more)
2 TBS green onion (I used a little more)
2 -3 cups shredded cooked chicken
1 cup grated pepper jack cheese (I used about 1 1/2 to 2 cups)

Mix all the above together.  Get 16-18 corn tortillas and put about 2-3 tablespoons of mixture on them.  Roll and flatten until sides crack open. Put on cookie sheet that has tinfoil on it sprayed with Pam.  I sprayed the top of the Taquitos with a little sea salt.

Bake at 425 until crispy.

Mexican Lasagna

Mexican Lasagna

2 pounds ground turkey
1/2 cup red onion
1 can corn
1 can black beans
1 can diced tomatoes with lime and cilantro
Chili powder
Cumin
dried basil
Salt
Pepper
grated cheese
tortillas


Turn oven on to 425

Saute up the ground turkey, add chili powder, cumin, salt, dried basil and pepper. Then add onion, corn, beans and tomatoes.

Spray a 9x13 casserole pan with Pam.  Start with a layer of tortilla with a thin layer of cheese, then turkey mixture and then a layer of cheese.  Keep layering until meat mixture is gone and you end with a layer of tortilla's and cheese on the very top.  Place in oven until cheese on top is melted and a little brown.

Dinner Rolls (A.K.A. Cinnamon Rolls)

3 cups warm milk
2 Tbsp sugar
3 Tbsp yeast
3/4 cup crisco
1 cup sugar
3 tsp salt
2 eggs and 1 egg yolk
9 cups flour

Warm up milk and pour over 2 Tbsp sugar and the 3 Tbsp yeast and let set for 5-10 minutes.  Add 2 cups flour and beat well.  Add other ingredients except flour and beat well.  Add remaining flour 1 cup at a time, beat well after each cup.  Add flour only until you have a soft dough.

Cover and let rise in warm place about 1 1/2 to 2 hours.

Shape into rolls and place on greased cookie sheet.Brush with butter and cover and let rise until double.

For Cinnamon Rolls, roll out dough and spread butter, brown sugar and cinnamon and roll into a log.  Cut and put on greased cookie sheet, cover and double.

For Rolls:

Bake at 350 for 15-20 minutes

For Cinnamon Rolls:

Bake at 350 for 20-25 minutes
